Coffee To Go … Yes, please!

2016-01-24 08.27.33As many of you know, we3 love to travel!  Sometimes we head to the same ole places, sometimes we venture out to new places, but always, always, we have fun!  We love being in the car together, we love the smell of walking into nice hotels, I personally love to see how hotels decorate.  I love to see how they use good furniture, which can take a beating and still look great!

So how does all that flow into my coffee caption?!  I also love coffee!  And we all know that {most} hotel room coffee, you know those little packs that come with the mini coffee pot in the room, are not great.  I usually wake up earlier than the boys and don’t like to go traipsing through the hotel looking for good or at least, better coffee.  So … years ago, I started bringing my own packs of coffee with me.
But first, a little back story!  Several years back, my trusty home coffee pot had finally bit the dust.  It had been my buddy for well over 14 years at that point, so of course I ran out to buy a new one.  The new version of that pretty simple coffee pot was like $75 at Wal-Mart, mind you!  I was in sticker shock!  I figure if I’m going to spend that much money on something that I {usually} only use once a day and have sitting on my counter for years to come, I better do a little more research!  In the meantime, I need coffee!  So I ran over to the coffee isle and looked for something instant!  Something for this ‘right now’ moment of ‘I need coffee …. right now’!  While looking at all those powdery mixtures, I found Maxwell House Instant Coffee!  I love Maxwell House Coffee, that’s what I use for my everyday coffee!  And I love the story of Maxwell House, “Good to the last drop” slogan!  Ok, back to my original thoughts!  This is how I ended up with instant coffee at home!  I know many of you will be like, ewww, instant coffee?!?, but it’s actually really good.  And instant! LOL!  I realized a few days after starting to drink this coffee that I usually make my coffee pot coffee … half strength … LOL … so now, I’m addicted to the instant coffee!  I can get so much more done with only one cuppa!  😉

Now, when we travel, I like to plan our trips around making sure that I can get some coffee … somewhere.  And it’s only really important to me, since my husband doesn’t drink it.  So I try to not make it horribly obvious that I want coffee as much as I do when we are out on the road.  Whether that be a quick trip to Knoxville or a road trip across the country … I like coffee in the car! I know most of the places that have good coffee and half and half on tap!  But that much half and half is probably not that good for me either!  Not to mention that it gets expensive! So I came up these little baggies of instant coffee to go!  Plus when you’re watching what you eat, you know exactly what’s in them!  And another plus … those same stops with the great coffee, like Pilot, Flying J and Love’s … don’t {{usually}} charge you for hot water and if they do, it’s minimal!  So take your own travel mug and your little baggie of Coffee To Go and have a happy little trip!  Oh!  And this is great for those early mornings in the hotel room too, all you have to do is use the little coffee pot to ‘brew’ your hot water!  😉

Here’s what you need:
• One Snack size ziplock baggie per cup of coffee you want to make.
• Powder Coffee Creamer
• Powder Sweetener, I use Stevia
• Instant Coffee

Jenn’s Coffee To Go Recipe:
Makes 20oz – 24oz cup of coffee
• 1 Tablespoon Instant Coffee
• 2 Tablespoons Powder Coffee Creamer
• 2 Tablespoons Stevia

Place all ingredients in the Snack size baggie and make sure it’s zipped tight.  Pack and go!  I usually pack these somewhere with easy access, so I can grab quickly … while my wonderful Husband is getting gas … everyone knows a girls gotta potty at every stop anyway!  And now we know why!  😉  ** You may want to make a trial cup at home to make sure of the measurements you like, that’s what I did with my original pack.  Plus, I like my coffee lighter and sweeter than most!

Eating healthy is no small task!

not fancy just foodFor the last few years, we’ve been trying to eat healthier.  Eating healthier is no small task, I think we all know that!  I will be completely honest here … I had NO idea where to start! 

It all started when I decided to try extreme couponing … We have a great Facebook site ran by a local lady that is just awesome … AWESOME!  When she started doing classes for extreme couponing, I wanted to know all about it.  I mean how else were we going to save all that money?!  I ran out, bought a big binder and thousands of page protectors and for a few weeks bought up every paper I could find, which was hard because everyone else was doing it too!  By the time I would find the deals and have time to make it to the store, most of the things I was after were already gone.  I really was trying to focus on food instead of laundry soap and such because we were trying to start eating healthy … remember?  After a couple months of feeling very disheartened when I would run in the store and the shelves would be wiped clean I just gave up on the extreme couponing thing and decided to find my own way to save.  I started shopping at Sav-A-Lot food stores, which made me focus on buying food instead of make up, new shoes and movies at the local Super Wal-Mart!  FOCUS!  Shopping at such a smaller store also made me realize that I was limited on what we could eat, since you don’t always have so many choices.  I could walk around for an hour and decide, without a list, what we were going to eat for the week and still only spend half or a third of what we would have normally spent as a family at the big store!  This made me feel like I wasn’t missing out on the extreme couponing!  Wahoo!  I had succeeded with saving us money on the grocery bill!  Now, what were we going to eat?

Insert Pinterest!  Do you not just LOVE Pinterest?!  Oh my word, anything and everything that you want to do … you can learn to do on there!  I have six million boards, 700 secret boards and one day I will actually start doing some of those DIY projects that I’ve pinned!  I may not be pinterest electronic hoardinga hoarder in real life, but I am a hoarder on there!    Now, where was I?  Oh yea!  What are we going to eat?  Have I mentioned my Husband doesn’t like chicken?!  Ladies, you know how hard it is to not cook with chicken and not to mention … it’s usually the cheapest meat!  AND, I usually try to eat low carb(ish), so throw in that I don’t usually cook rice or pasta!  EEEEKKKKKK!  All foolishness aside, I actually had to start a second binder for meals we3 would actually eat.  The first was a binder of recipes and such that I had been collecting for a few years.  This was when it finally hit me … I have to do what’s best for us … hello … what my family needs, on our time table, and stuff we want to eat!  Tah dah!  I did pretty good for a little while, I started around August ( I think) and made it all the way through the Holidays that year!  It really was working!  I was doing the food prep thing, planning it all out, freezing it and trying to remember to actually good the items that were in the freezer.  My major problem was having time to cook dinner on the nights that I work late.  Most nights it was just easier to grab something quick and plan on using those meals for the four days that we are all home.  Which was still working for us … mostly.  We tried a few other things too and a couple other ways of eating, but it’s still just easier and less healthy to grab something out!

All that to say … We’ve started again!  This time, I’ve combined one of the meal plans that we followed for a few weeks with very lean, bland food and eating six times a day with what I did before with the food prep.  With the restrictions that we put on ourselves as a family, it’s not easy, then I realized that we really just eat the same things all the time. I was trying to keep it eventful and not plan the same thing all the time, which is way more expensive and time consuming.  I made a list of the things that all three of us WILL eat!  Then I started working on finding the best deals on those items.  {This is when I realized why the couponing wasn’t working for me, I had no meal plan, I had completely set myself up to fail.}  With a meal plan in place, I could find good deals on the foods I actually needed to buy.  I started with a printed blank monthly calendar, and started filling in what we were actually going to eat … yes,  a month at a time.  Many of you may already to this, but it was completely new to me!  I was never taught meal planning in my Home Economics class in High School and my Mother is one of those people who has nothing for dinner, yet pulls three things out of the cabinet and has a seven course dinner for twelve!  Really, I call my parents our alternative heat and food source during the winter!  Ha!

I know I am jumping around a lot, so here’s what I’m doing now!  And for those of you that have been following my weight loss, the scale has started tipping again in the right direction!  Praise the Lord!

The last time I did this, we did not have enough bowls for dividing it all out, so I had to put everything in ziplocks and come home every night and divide it out into the dishes, which was very time consuming!  So I bought enough bowls before I started, which has been a life saver!  Soooo much easier this time around!  And I’m using measuring scoops for measurements, but if you are super strict with your diet, you may want to buy a set of kitchen scales.

The last two weeks we mostly ate Ground Turkey, Chicken and Cod with a side of mixed veggies or a small salad.  The boys are eating 5 times a day, while I am eating 3.


Overnight Blueberry Oatmeal

For breakfast the boys are eating Oatmeal.  I use 1/4 cup (quick) Oats (these are Old Fashioned), 1/4 cup blueberries & 1/4 cup Almond milk (unsweetened).  I did find that with the Old Fashioned Oats it was a lot thicker and needed more almond milk, so I used about 3/4 cup.  We also add a scoop of Vanilla Protein Powder (of your choice).  I put all the ingredients into a pint mason jar and store in the fridge and the night before your ready to eat, add the almond milk.  The boys like theirs cold, but you could heat it and eat it warm too.

For breakfast and lunch, I am eating Breakfast Burritos.  I usually make 50 or 60 of these at a time, but I get tired of eating the same ones all the time, this time I only made about 26.  I start by scrambling about 18 eggs, sometimes I use all real eggs, sometimes I cut it with Egg Beaters.  I try to keep it as simple as possible, but as cheap as possible too.


When the eggs are mostly cooked, I usually add meat. This time since I was using ground turkey, I added 2 cups of that and 2 handfuls of (previously chopped) baby spinach.  Let that all cook down.  You can add whatever you like, I find that watery items like tomatoes make the reheating process too soggy, so I usually leave those out.  Now, your ready to assemble!  Set up your little assembly line however you like … this is what mine looks like!


Oh and I do LOVE those little foil sheets for wrapping everything in!  I got that box of 500 for about $9 at GFS (Gordon Food Service) or you could pick up some at Sam’s.  I got my Parmesan cheese and low carb wraps at Sav-A-Lot.

Begin scooping your scrambled egg mixture into the wraps.  I use about two heaping tablespoons.  DSC_0016You’ll get the hang of this as you go along.  It took me a few before I got it right!

At this point, I like to add some cheese to the burrito. You can use any kind of cheese you like, or leave it out if you like, but when you reheat them, it really adds a nice flavor!  And I tried added the cheese to the mixture while cooking the eggs, but it gets to stringy to scoop out and place in the wrap!  DSC_0017Now  your ready to wrap it up … burrito style … this only took me about a hundred or so to master … good luck with that!  I think I was using too much in those first few.  Remember, the calories and carbs are not so bad on these, so if you want you can have two per meal.

Like I said, I got about 26 out of this batch.  Wrap this all up and I can always get 12 in a gallon size Ziplock bag.  They lay nice and flat in the freezer too.  I lay one out in the morning while I am getting ready for work and let it thaw a bit, take it out of the foil wrapper and wrap in in a napkin, heat it in the microwave for 30 – 45 seconds and you’ve got breakfast.  Quick and easy and ready to eat on your way to work!  When I originally made these, I remember the carbs and calories being so low that I thought, Wow, I could easily eat two, but they are really filling and I only eat one.  And it usually sticks with me til lunch time.

Here’s a bit more of what we ate the last two weeks!  I cooked 10 lbs of ground turkey in the crock pot overnight.  Super easy!  This is what I used for the Breakfast Burritos too!  I also use that same meat for the Turkey Wrap meal.  I use about 1/4 cup – 1/3 cup of ground turkey per wrap,


Turkey Wrap with Romaine Lettuce & Parm Cheese ‘Salad’

same low carb wraps too.  And I pair that with a small amount of romaine lettuce and a little Parmesan cheese.  We just reheat these in the microwave for 30 secs or so too.  I did flavor the turkey with Himalayan pink salt and a bit of pepper and a bit of powdered ranch dressing.  I actually had lots of turkey left over, remember, I’m cooking for two weeks.  I just  measured out the rest of my meat and put it in Ziplock baggies for the next week.  Wahoo!  All the cooking’s done, all I have to do is assemble meals!  Easy peasy!



Chicken & Veggies … it doesn’t look like it, but this is actually about a cup of chicken and a cup of mixed veggies! 


Cod & Veggies … 5 – 6 oz piece of Cod, which I baked in the oven with lemon pepper on a cookie sheet with parchment paper (easy clean up!) and another cup of veggies! 


Love these bowls!  I think they are Rubbermaid brand, the ones with the red lids.  The bowls and lids stack so easily in the fridge, in your lunch bag (box), in your cabinet and make loading the dishwasher so much easier since their all the same size!  Remember to multiple the number of times your eating per day to the number of people in your house! 

I got all the meat at Sam’s and all the veggies.  The veggies came in a bag with 4 smaller microwavable bags, they are so easy, and stayed fresh all week.  I did cook everything before putting them in the bowls.  I did add some ‘flavor’ by salting and peppering the meats while cooking.  The last meal plan that we followed did not allow for that … we have to LIKE what we are eating if we are going to do this afterall!

Look at life through the windshield and not the rearview mirror.

It’s time to live life looking forward and not behind.  There’s nothing Looking backback there worth fighting for.  We should want for things to be different … better for the future!  Let’s teach ourselves to look at life through the windshield and stop living life looking through the rear view mirror.

This coming year … 2016 … I plan on putting away the old and embracing the new.  God has great things for us, if we will just reach out an receive HIM.   Paul says in 2 Timothy 1 verse 7 that God has not given us a spirit of fear, but of power and of love and of a sound mind.   I will lean on the fact that God does not want me living in fear of the fact that things may never be the same as they were in the past {they will be better in the future}.  I will lean on the fact that God has entrusted me with HIS power to live the way HE wants me to live.  I will do my best to love the way that HE loves us.  And I will remember that HE has given us a SOUND MIND!  He doesn’t want us to worry about tomorrow, tomorrow will take care of itself.  LIVE, LOVE & LAUGH … today. 

May your 2016 be a new beginning of something GREAT!  We all need to strive to have a closer relationship it God.  We all need to strive to have a better relationship with family.  We all need to strive to just be better people in general … everyday.







Yummy Fruit Parfaits!

OH MY GOODNESS! That’s just about all you can say when you try this great *GREAT* dessert!

As I think I’ve mentioned, my son and I have a new obsession with Ree Drummond’s show, The Pioneer Woman!  We’ve exhausted the resources on Netflix and are ready for a new season of those if you are listening Netflix!  🙂

It all started with us snuggling down at night and right after we said our prayers … we would watch an episode of The Pioneer Woman, their only 21 or so minutes, so it’s perfectly fine and then we are off to sleep and to dream of yummy goodness!  My son loves to ‘cook’ up things in the kitchen, which are usually pretty good, so I thought this show would help him learn to actually cook, since I’m not always in the kitchen.  I’m striving to be a Pioneer Woman … just not there yet!  We’ve yet to see an episode where he doesn’t like something.  We’ve learned quite a bit too!  Tonight for dinner, he actually chopped the romaine lettuce and with a bit of instruction, made a wonderful dressing.  I have got to learn that he is getting bigger and can do things … I’m going to have to let the reins out just a little bit more … he did great with everything!  The salad was amazing!

Fruit ParfaitMy sister once told me that I made everything too difficult when I cook … or something like that … or I said it and she agreed with me!  It didn’t hurt my feelings, but I did try to make things easier!  She can whip up a dinner with anything at anytime, just like my little Momma!  As you can see by my blog name … I’m trying NOT to reinvent the wheel … but I am trying to do it healthier.  Sometimes cutting corners can lead to shortcuts that are just not always good for us, well when I cook anyway!

The last few years, my little family of 3 have been trying to re-learn what we know about food, what food we all like to eat and then combine that with what’s actually healthy for us.  That list can get pretty short, pretty quick when you have people who don’t really like chicken or pasta!  LOL!  I sat down a few years ago and with the help of Pinterest, started a list of what we all LIKE to eat.  Then tried with all our might to make those dishes as healthy as possible.  *** Let me insert here… we don’t always eat super healthy, but when I cook … (mostly) we sure try! ***  This list gave us a jumping off point of what to have on hand, and stuff that was going to get eaten and helped me not to flounder around so much in the store and in the kitchen!  I was able to start preparing ahead and I think it’s saved us a bunch of money! Money that is not thrown out in wasted (dog)food that wasn’t eaten or even liked in the first place!  😉  I do like to cook, but I also want the boys to love what I make!  It does my heart good to see them eating and yumming as they do.

I encourage you … if you are pursuing the food route too … keep at it!  Find what works for you and your family!  Just because they do it on T.V. or Pinterest … doesn’t mean that it’ll work for you.  Start with what you know … and go from there!

NOW … back to the newest project from our kitchen!  These are SUPER easy and SUPER yummy.  Kid & husband tested and Mommy approved!  We whipped these up a few minutes after dinner and before heading out to see the new SpongeBob Movie (which was great) and we popped them in the fridge for when we got home!  At first, my Son didn’t realize what we were making … then he remembered … oh the look on his face!  He was so excited!  They were actually better than I ever expected!  REALLY!  We did use vanilla yogurt (not greek) and we used frozen fruit medley, which I sprinkled a bit of Stevia on, but probably wasn’t needed.  You’ve got to try these!  Reading over the recipe, I left out the cream too … hmmm … didn’t miss it, but wouldn’t have if I’d read the recipe in the store!  Who leaves cream out of anything!  😀

Best Yogurt Parfait Ever Recipe ~ Recipe courtesy Ree Drummond “The Pioneer Woman”Original found at:


One 17 1/2-ounce container plain Greek yogurt
1/2 cup heavy cream
1 teaspoon vanilla extract
1/2 cup brown sugar
Assorted berries (or other fruit of your choice)


First, pour the yogurt into a bowl. Then add the cream and vanilla. With a whisk, carefully stir until combined. It should be nice and thick.

Sprinkle the brown sugar evenly over the top of the yogurt mixture. Do not stir the mixture. Cover the bowl with foil or plastic wrap and tightly seal the edges. Place in the refrigerator for at least 20 to 30 minutes.

When you are ready to serve, place a small handful of berries (or other fruit) into a bowl or cup. Without stirring the mixture, spoon the yogurt over the berries. There will be creamy areas and brown sugar areas. Repeat the layers once, ending with berries on top.

Mason Jars … for storage … who would have thought?!

So we all (probably) have mason jars laying around these days!  We save and reuse these jars for canning mostly … and Brown Sugar Mason Jarbuttons.  LOL!  Until just a few days ago, while watching an episode of The Pioneer Woman, I have never thought about using them for other, fresher, storage!  Duh!  So, my first attempt is taking the brown sugar out of the bag and utilizing one of the jars!  I’m thinking wide mouth would be better … but I’m using what I’ve got!  We’ll see how it works out!

Do you use Mason Jars for everyday use?  If so, comment and let me know what you do with them … I need more ideas!  I also think I just realized how  much money I would save on ziplock bags!  🙂

Broiled Grapefruit

Broiled Grapefruit

I’ll be perfectly honest!  I am not, nor have I ever been a grapefruit lover! But, when you have grapefruit, you eat grapefruit … right?!

One of my wonderful nail clients brought me fresh oranges straight from Florida last week and among them was a GREAT BIG grapefruit!  I have to admit, I’ve been wanting to try this recipe for awhile!  The only thing holding me back was the fact that I never have grapefruit in the house!  Wellll, now I do!

As you know, with Pinterest, just about anything is possible … well, for me … tryable!  I pinned this awhile back and thought it looked yummy … remember … I don’t really care for grapefruit … so it must have looked really good!  There were quite a few recipes for this, but the one I followed today came from William-Sonoma!  What could possible be wrong with that?  Nothing!  That’s what!

I have to say … my boys and I enjoyed this!  What a great, new way to eat this fruit.  I hope you like it as much as we did!  Of course, what wouldn’t be good with butter and brown sugar on it?!

Broiled Grapefruit

  • 2 large grapefruits, well chilled
  • 1/2 cup firmly packed light brown sugar
  • 2 Tbs. unsalted butter, melted
  • 1 tsp. ground cinnamon
  • 4 small fresh mint sprigs


Preheat a broiler.

Cut each grapefruit in half crosswise. Cut a thin slice off the bottom of each half, if necessary, so that it will stand upright.

Using a serrated grapefruit knife or a small, sharp knife, loosen the grapefruit segments in each half by first carefully cutting between the fruit and the peel and then by cutting along either side of each segment to free it from the membrane. Leave all the segments in their shells. Place the halves upright in a baking dish.

In a small bowl, stir together the brown sugar, butter and cinnamon. Using your fingers, sprinkle the sugar mixture evenly over the grapefruit halves. Slip under the broiler about 4 inches from the heat source and broil until the sugar is uniformly bubbly, 2 to 3 minutes.

Transfer each grapefruit half to an individual dish and garnish with a mint sprig. Serve immediately. Serves 4.

“Plans” • My 2015 Word of the Year

I kjer 2911 hot air balloonsnow some people are big on focusing on a word for the year. I’ve been reading some on FB this week, some people are still praying about their word, for what they feel that God is wanting them to focus on for 2015. I normally ‘see’ life in words … every new corner we turn seems to have a word attached to it. When we’ve left positions in the past, the words were “Out of the Box” once and “Free” for another. The last couple of year’s word that kept resonating in my mind was “Easy”. Looking back over the last few years, I know that God was trying to take a load off of us, that is where the easy word comes from. We are flowing more easily these days. Thank God for that!  😉  He always has our back, even when we fight, kick and scream to stay in those miserable and/or almost impossible situations!  We just have to make sure that the path that we are following is of HIM, no matter how we feel about it!

The last couple of days … as I’ve not made it a huge deal in my mind … I like to know that the word that I am going to focus on is of HIM and not just something that I’m focusing on because of the things around me or that I “think” I’m going through. I keep seeing the word “PLANS”. Now, we all know that I am a planner, we all know that I love (or have a slight obsession with) house plans. I just want to make sure that this word is of God. As I was just in the kitchen cooking the boys and myself some breakfast for dinner, I turned and ‘saw’ it again in my head.Delight yourself in the Lord

I’m going to hang onto this word for 2015. I pray that God will bring our plans to fruition this year. I want most certainly to know that our plans are in fact HIS PLANS for our life! That what we have planned for this year is actually what he sees for HIS plan for our future! I pray that HE keeps us on track and on the right plan for the life that HE has laid out for us!

One of my absolute favorite scripture verses is Jeremiah 29:11, For I know the plans I have for you, declares the LORD, plans to prosper you and not to harm you, plans to give you hope and a future. Also as I turned and saw the word ‘Plan’, I could hear him reminding me of this scripture and also of Psalm 37:4, Take delight in the Lord, and he will give you the desires of your heart. I accept this over our lives this year Lord!  I also pray this over YOU, YOUR LIFE and YOUR FAMILY this year, that HE will flow through your life this year and that your plans are his plans as well.  I pray that God takes us on a journey this year that not only brings us far closer to HIM, but one that brings us the desires of our hearts!

What are the desires of your heart?  Are they in line with God’s desires for you?  If you’re not sure, simply ask him to reveal his plan for your life to you.  I encourage you to read His Word. Romans 12:2 says, Do not conform to the pattern of this world, but be transformeDo not conform romans 12 2d by the renewing of your mind. Then you will be able to test and approve what God’s will is—his good, pleasing and perfect will.  Reading the Word of God (the Bible) is just like having a conversation with HIM or an instruction manual if you will, for life.  HE wrote it … it must be important and good!  If you don’t have a Bible, well that’s fine too, simply go to YouVersion and download the app, start reading or even listen to it straight from there!  You can download this app to every device and/or computer you have as well and keep up with where you are on all of them, so it’s convenient for you!
